A Little Treatise on Confectionery and Entremets Sucrés.Madras: Higginbotham and Co., 1884 Stock Code: 143092
Second edition, first published 1881. Drawn from a series of articles by "Wyvern", doyen of Anglo-Indian cuisine, on entremets sucrés published in the Madras Times offering to extend the "native cook's" limited repertoire of "presentable sweets" with a practicable selection of "jellies, creams, pastry, soufflés, pancakes and fritters, puddings, ices, cakes, preserves, dessert, and miscellaneous trifles... with a few words concerning wines, and cooling drinks" (Prologue). Uncommon, particularly so in the original cloth, here neatly restored.
Octavo in sixes. Neatly recased in the original green cloth, title gilt to the spine and front board, both boards with floral panel in blind, yellow surface-paper endpapers renewed.
A little used, somewhat rubbed and stained externally, occasional marginal pencil marks, finger- and food-soiling - the section on jellies seems to have come in for particular attention - light browning overall, remains about very good, with character.
